Pinterest always has a wonderful selection of recipes you can prepare ahead of time to ease the stress of getting things cooked on time. I came across this recipe last week and just loved the ingredients the blogger used to make it, as well as the ease and simplicity to assemble it.
With Halloween only two weeks away and Thanksgiving a little more than a month off, I thought this would be the perfect breakfast to serve when friends and family come to visit.
Assembling it the night before takes little to no time at all, and cooking it in the morning is a breeze.
First, slice thick, crusty bread into one-inch cubes. You want to use day-old bread so that the cubes are firm enough to soak up the rest of the ingredients. Use any bread you prefer. I used sourdough to give the French toast a little extra zip, but whole-wheat or French bread will work just fine.
Place 3 1/2 cups of bread cubes into a greased 9×13 inch baking dish. Spread the bread slices to cover the entire dish.
Next, prepare the egg and milk wash to pour over the bread. Whisk together seven eggs, two cups of 2 percent milk, one teaspoon of vanilla extract, 1 1/2 teaspoons of pumpkin pie spice and 1/4 cup of pumpkin butter or pumpkin pie mix. I used pumpkin pie mix and loved how it gave the dish the perfect amount of pumpkin flavor. Pour the mixture over the bread and make sure every piece is covered.
Cover the bread completely.Cover the dish with plastic wrap and place in the refrigerator overnight. This allows the bread to soak up all the delicious flavors from the wet ingredients.
In the morning, preheat the oven to 350 degrees, then uncover the dish and sprinkle about 1/4 cup of brown sugar and nuts on top. I used walnuts, but pecans or another oily nut will work as well. Next time, I might add raisins or cranberries for extra sweetness.
